There are actually two parts to the castle in Symphony of the Night. The first map is of the normal castle. The second is acquired, once you complete the game by saving Richter Belmont.
Below is a table, the colors of the map.
Make sure also to get every square inch of the castle colored in Blue, or you will not get the best ending.
